Teriyaki Salmon and Kale Salad is a delicious easy healthy treat for lunch or even dinner. Down below I will share with you this simple recipe for satisfying and moist teriyaki salmon.
What you will need:
- 1 Salmon Filet
- 1/2 cup of Brown Sugar
- 1 Tbsp of Ground Ginger
- 1 Tbsp of Garlic Powder
- 1 Tbsp of Onion Powder
- 1 Tsp of Salt
- 1 Tsp of Pepper
- 2 Tbsp of Honey
- 1/4 Cup of Soy Sauce
- 1 Cup of Water
- 2 Tbsp of Cornstarch
- 1/4 Cup of Water
- 1 cup of Kale
Tools:
- One Medium Size Bowl
- Whisk
- Small bowl
- Sauce pan
- Sheet Pan
- Foil Wrap
- Food Brush
- Large Bowl
Prep:
In a medium bowl add brown sugar, ginger, garlic powder, onion powder, salt, pepper, honey, soy sauce, and the cup of water. Whisk the ingredients until well incorporated. In the small bowl mix 1/4 cup of water and the cornstarch. Mix until the cornstarch is well incorporated. Sit to the side until needed.
Line the sheet with foil wrap. Then place piece of salmon on the sheet pan. Preheat the oven to 415F.
Cooking the Sauce:
Add the brown sugar mixture into the saucepan on medium heat. Whisk and cook for 3-5 minutes until sugar is dissolved. *Note before adding the cornstarch mixture to the saucepan mix once more to ensure. Once the sugar has dissolved add the cornstarch mixture. Continue to whisk to the cornstarch mixture until the sauce starts to thicken. When the sauce becomes thick allow to cook for another 4-5 minutes on medium low. Remove from the stove and pour sauce into a heat proof bowl. Sit the sauce in the fridge and allow to cool for 30 minutes.
**Hack** If you are short on time you can buy any quality prepared Teriyaki Sauce to save time.
Cooking the Salmon:
With the food brush, place the teriyaki sauce over it. Fully cover the fish and place in the oven. Allow the fish to cook for 8 minutes. After the 8 minutes is up, cool for 5-8 minutes.
Assemble:
In a large bowl place salad dressing of your choice in the bottom of the bowl. I used Balsamic Vinaigrette. Add kale, cucumbers, tomatoes, and (pull the salmon apart with fingers to create flakes of fish) salmon. Add pepper and dried parsley to taste.
