Juicy Fried Chicken Breast

Have you ever wondered how to make your chicken breast more juicy? No problem I got you all the way covered. I am going to share with you my favorite fried chicken breast recipe. If you make this recipe make sure you #jdelawcious so I can see your creation.

What you will need:

2 Boneless or Split Chicken Breast

1/4 cup of Salt

6 Cups of Water

1 Tbsp of J. Delawcious Poultry Seasoning

2 Cups of All Purpose Flour

2 Eggs

1/8 Tsp of Garlic Powder

1/8 Tsp of Pepper

1/8 Tsp of Salt

2 Cup of Canola Oil

1 Cast Iron Skillet

Prep:

Pour the water and salt into a large bowl. Stir the salt until it dissolves. Submerge chicken breast into the water. Let the chicken stand in the salt brine for 2 hours or overnight. Put in the fridge until ready for use. After the brining is over, remove the chicken from the liquid and pat the meat dry. Discard the brining liquid. Once the meat is dry, sprinkle the J. Delawcious seasoning over the chicken breast.

Then sit aside. In a shallow bowl add the flour, garlic powder, pepper, and salt. Mix well. In another shallow bowl beat the two eggs. Dip the chicken in the egg mixture and then into the flour. Once coated dip the chicken back into the egg and then again into the flour. Repeat this step for additional pieces.

Cook:

Pour oil into the skillet and heat to 350F. Once the temp is up, place the chicken in with tongs and cook about 5 minutes on one side, After five minutes flip the chicken. You want to continue to cook the chicken until you have an internal temp of 165F.

Serve:

Serve this with greens, rice, or the no fail mac and cheese

No Fail Mac and Cheese

screen-shot-2016-10-17-at-11-00-54-amWhat you will need:

1 Cup of Elbow Pasta

1 Cup of Shredded Gruyère Cheese

1 Cup of Sharp Cheddar Cheese

2 Tbsp of Butter

2 Tbsp of Flour

1 1/2 Cup Milk

1/8 tsp Salt

1/8 tsp Pepper

1 Cup Breadcrumbs (optional)

1 Box Grater

1 Sauce pan

1 Baking Dish

Prep:

Preheat the over to 350F. Grate Gruyère and Sharp Cheddar cheese. Keep a cup of both cheeses reserved for the topping, Cook elbow pasta for half the time in salt water. I cooked the elbow pasta about 5 minutes.

White Sauce:

In a sauce pan on medium heat, add the butter and then melt it. Once melted add the flour. Continue to stir until raw flour elements have fully incorporated into the butter. Then add milk in 3 parts. After adding the first part, stir until incorporated. The milk will thicken. Continue to add milk until gone. Turn off the heat and then add a little of the cheese to the white sauce. Stir until it is incorporated and then add more. Repeat this step until the cheese is gone.

Combine:

In same sauce pan, add the cooked elbow pasta. Stir until the cheese coats the pasta. At this point you can add salt and pepper to taste, Once you’ve seasoned the mac and cheese, place it into a baking dish of your choice. Add the reserved cheese on top. Then the breadcrumbs if you chose.

Cook:

Place it into the oven and let cook for 15 minutes or until bubbly.

Serve:

You can serve this alone with a side salad or with a meat. Fried chicken pairs nicely with this or a good piece of baked fish,

I hope you enjoy.

Happy Cooking
