Roasted Chicken

Roasted chicken is elegant and takes no effort to prepare quickly for your family. A simple seasoning blend and veggies makes this a complete dinner without the mess. Today I will show you how to make the most juicy, flavorful, and crispy chicken in a flash!


This is what you will need:

Roasted Chicken1 Whole Chicken 

1 tsp of Salt 

1 tsp of Pepper

1 tsp of Garlic 

1 tsp of Onion Powder

1 tsp of Oregano 

1 tsp of dried Rosemary

1 tbsp of oil (avocado, olive, etc)

The juice of one lemon

Vegetable of your choice (Carrots, Broccoli, Asparagus, potatoes, etc)

Prep:

Preheat the oven to 425F. Cut the spine from the back of the chicken or have your butcher remove it for you. Pat the chicken dry, then squeeze the juice of one lemon on both sides. Then sprinkle oil on both sides. In a small bowl add salt, pepper, garlic, oregano, and dried rosemary. Mix well and then coat the chicken on both sides. 

Cook:

On an oiled baking sheet place the chicken and veggies on. Sprinkle a little oil and left over seasoning on your vegetable of choice. Massage the vegetable and then into the oven for 45 minutes or a desired internal chicken temp of 165F. 

Pineapple and Melon Salsa

(Equal Parts)

Chopped Pineapple 

1 Chopped Jalapeno (keep the seeds if you like it hot)

Chopped Melon

Chopped Cilantro

Chopped Red Onion

2 tsp of Oil 

1/4 cup of lime juice 

Salt and Pepper to taste

Serve:

Scatter salsa over the chicken and eat.
