Chicken Sausage What you will need:

2 lb. coarsely ground chicken

1-2 tbsp. pure maple syrup

¼ c. finely chopped fresh Italian parsley

2 tbsp. finely chopped fresh sage

2 tsp. salt

¼ tsp. Freshly ground pepper

¼ tsp. ground nutmeg

1/8  tsp fennel

¼ c. vegetable oil

Prep:

In a small bowl add chicken, parsley, sage, salt, pepper, syrup, nutmeg, and fennel. Mix well then sit aside. You can make these right away or store in the fridge overnight.

Cook:

Add oil to the nonstick skillet on medium high heat. Then use an ice cream scoop and drop the chicken mixture into the skillet. Pat the sausage down with a utensil to form patties.  Cook sausage on each side about 3-4 minutes. The sausage are done when they are firm to the touch.

Serve:

Serve these sausages as shown here with a fried egg, french toast, or any other breakfast favorites.

Happy Cooking!
